Insurer Gard appointed the AP Moller-Maersk company to start work on 20 March at Bayonne, local media reported.
The 4,600-dwt Murueta Naviera vessel(built 1994) hit a breakwater and broke up in February in a storm.
The work will take at least two months.
The plan is to take away bits of the foreship before the remaining section is winched on to the beach for dismantling.
